I was able to use an image saved to my main Wordpress domain too. Not sure if there's a way to get the Meta Tags for 'Product Pin' set for each course though. That bit didn't seem to make a difference when I tested it on Pinterest.

Ahh! I think I've done it! If you add a 'head' html tag in the description on your course site 'information' page, then copy and paste the meta tag info listed here:https://developers.pinterest.com/docs/rich-pins/products/ and edit as needed for your product that *should* enable rich pins for your shop site. Hooray! I'm yet to see it though as it takes some time I think but Pinterest has validated it.
